Hello friends! Does anybody else feel like this week is flying by? Poor little Levi has his first cold (not bad for being 13 months old!), but his sleeping has been affected and naps have been way less than stellar. In fact in the past two days he has just completely skipped two of his naps which really sucks for me, because his nap time is the only time that I have to get stuff done! He has still been doing good in the mornings though which is when I workout, so I can’t complain there! I’m not going to get into it today, but in a nutshell my workouts have been good and eating has been not so good :/
But anyways this is pretty much what yesterday consisted of:
1. Pretty much the only thing Levi will eat right now is cheerios and blueberries. I kid you not he ate like 60 blueberries last night- and then had a bath!
2. Must stop eating twizzlers.
3. Went and met my friend Geena for a drink…Levi loves his auntie!
4. Princess Axell looking less than thrilled…
5. Nasty rainy weather all afternoon :/
Stu was late getting home, so I was on my own for dinner. While at the store I had picked up a pack of Flat-Out Wraps, and decided to make something using one of those.
I spread pesto onto the wrap, topped it with spinach and fresh mozzarella and placed it under the broiler. Done sir done.
It turned out SOOOOO good! I pretty much love pesto on anything, but this has got to be one of the best recipes I have come up with using it! You can obviously use shredded mozzarella as well, but their is just nothing better than fresh!
Spinach, Pesto and Mozzarella Flatbread (Serves 1)
- 1 wrap of your choice (I used Flat-Out)
- 3-4 Tbs. pesto
- 1 C. fresh spinach
- 1-2 oz. fresh mozzarella, sliced thinly
- Set your oven to broil
- Spread pesto onto wrap and lay flat onto baking dish.
- Layer the spinach on top, followed by the mozzarella slices.
- Sprinkle with salt and pepper and place under the broiler.
- Broil for 5 minutes.
