Hello friends!
Today I have one of the best chicken recipes I have ever eaten. Not only is it delicious, but it is also healthy and easy to make! This is one of those dishes where the whole time you are eating it you will keep saying “Yum!” Like I seriously could not stop talking about how good it was!
And for all my vegetarian/vegan friends, I bet this would taste great with a meat alternative as well!
Sesame Chicken with Rice and Kale
(Inspired by THIS recipe)
- 4 Tbs. soy sauce
- 3 Tbs. peanut butter
- 4 Tbs. honey
- 2 Tbs. sesame oil
- 2 tsp. siracha
- 1 lb. chicken tenders
- 1 Tbs. vegetable oil
- 3 Tbs. minced garlic
- 3-4 C. kale (or spinach)
- 1.5 C. rice
- 2 Tbs. sesame seeds
- In a small bowl, mix together HALF of the soy sauce, peanut butter, honey, siracha, and ALL of the sesame oil until completely combined. Pour over chicken and let marinate while preparing all the other ingredients.
- Bring a large pot of salted water to a boil.
- Add the kale to the boiling water and cook for 1-2 minutes. Drain and set aside.
- Add canola oil to a large skillet and heat over med/high. Add garlic and saute for about 2 minutes.
- Add the chicken (and marinade) to the pan. Cook chicken until cooked all the way through.
- Once chicken is done, add the rice and stir to coat with the sauce. Cook for about 2 minutes (rice will start to caramelize).
- Remove from heat and add the kale to the rice and chicken.
- Mix together the remaining soy sauce, peanut butter, and honey. Drizzle over the top of the chicken and rice mixture.
