Not trying to toot my own horn or anything…but my lasagna recipe is good. Damn good.
Friday night we went to my parent’s house for dinner, and my lasagna sounded perfect. So I made it (and actually remembered to write the recipe down) and it was delicious like always. In fact my dad says it’s the best lasagna he’s ever had.
The secret to this lasagna is the combination of the three cheeses and the pesto. I personally prefer sausage in this recipe, but ground beef tastes great as well. And not only is this lasagna delicious, but it is easy to make as well! Using jarred marinara sauce and no boil lasagna noodles really speeds up the process and makes it a great recipe to make when you are limited on time. I promise this will be the best lasagna you have ever eaten…for real.
Erin’s Lasagna
- 1 1/2 C. low-fat cottage cheese
- 15 oz. low-fat ricotta cheese
- 2 C. mozzarella cheese, divided
- 1 egg
- 1/4 C. pesto
- 1 lb. ground sausage (or ground beef)
- 2 jars marinara sauce (or make you own- recipe to come!)
- 12 no-boil lasagna noodles
- Preheat oven to 375 and grease a 13×9 baking dish
- In a large mixing bowl combine cottage cheese, ricotta, egg, pesto and 1 C. of the mozzarella.
- Cook and drain sausage. Combine with marinara.
-Now you’re ready to assemble lasagna

4. Noodles
5. Sauce
6. Ricotta/cottage cheese
7. Noodles
8. Sauce
9. Mozzarella
- Cover with foil and bake for 45 minutes
- Remove foil and bake for 10 more minutes
